Ingredients

Pink lady apples , or , Mcintosh apples (as per person)

1 Apple, peeled, cored, sliced thin in each pan

4 Tbsp,unsalted butter (try with a butter alternative)

1/2 cup Gluten-free Flour

3/4 tsp. brown sugar in each pan

1/2 tsp. cinnamon in each pan

1/2 tsp. xanthan gum

1 tsp. pure vanilla extract

1 1/2 cups milk

Place 4 Tbsp. butter in each glass pie pan. Place in oven and turn oven on to 400°. Butter will melt, sizzle and just start to brown while oven warms up and you prepare apples.

Slice the apples thinly after peeling and coring them.

Take the pans out of the oven once the butter has melted. Line each pie pan with a single layer of apple slices.

Season apple slices with cinnamon and brown sugar.

Return pie pans to the oven and cook apples for 7 to 8 minutes.

As this is going on, thoroughly mix the milk, eggs, flour, xanthan gum, sugar, vanilla extract, and sugar in a blender. If there is a batter setting on your blender, use it.

You can use a whisk to mix everything if you can’t or don’t want to use a blender. Just be sure you whisk until all the flour is dissolved. When all the ingredients are combined, you should have four cups of batter.

After the apples have roasted for 7 to 8 minutes, take the pie pans out of the oven. Each pan should have two cups of batter, which should be uniformly distributed over the apples.

Bake for 22 to 25 minutes at 400°. Take out of the oven. Pancakes will collapse after removing from oven.

Eat hot and sprinkle with maple syrup or sprinkle with powdered sugar.

Additional tips

  • I recommend a sour variety of apple such as Pink Lady, Braeburn, McIntosh or Granny Smith etc. You can use a pear instead if you like. If you’re not a fan of apples, feel free to leave them out! I would still add the brown sugar and cinnamon though!
  • You can try other flour blends and comment below to share ideas if they work well.
  • If the gluten-free flour mix you are using already has xanthan or guar gum in it, omit the xanthan gum called for in this recipe, or use a different gun.
